The freeze drying process applied in order to preserve and store food ingredients with no need for refrigeration. At first it was coffee and then came meats, fish, dairy products, vegetables, fruits, herbs and several flavourings.

Lyophilization lowers the temperature of the food products below freezing. After that, a high-pressure vacuum extracts the water in the form of vapour, which is removed in the form of ice. After extracting the remaining moisture, the product retains its physical structure and it is preserved for rehydration later. This is how food products are dried at low temperatures without damaging their physical structure. They don’t need to be refrigerated or preserved with chemicals or additives. They can be reconstituted easily by adding water. Taste and texture are as desirable as in fresh products! There are applications for several food products in special industries such as restaurants, bakeries, biotech industry, camping & hiking, military & emergency etc.
